  • 1 (14.5 oz.) can fire-roasted crushed tomatoes
  • 2 Tbsp. Organic Curry Mole
  • 1 Tbsp. olive oil
  • 4 eggs
  • 4 slices grilled bread or toast

Poached Eggs with Organic Curry Mole

How to Make It

In a medium skillet combine tomatoes, Organic Curry Mole and olive oil. Bring to a boil, reduce heat.

Crack each egg into the simmering sauce. Cover and simmer until the whites are set and the yolks are still runny, about 5 minutes.

Arrange the grilled bread on serving plates or shallow bowls. Place an egg on each slice of toast and spoon sauce over.

You take it from here:

  • Spoon the sauce and eggs into bowls and cut the toast into sticks for dipping.
  • Serve over cooked quinoa, rice, or barley instead of toast.
